Marinated Pigeon Peas with Tulip Sausages

Ingredients

Marinating
  • 1.8 dl olive oil
  • 0.6 dl white vinegar
  • 0.5 finely chopped onion
  • 4 Bay leaves
  • 12 pepper grains
  • 3 olives
  • 55 g finely chopped red bell pepper

Instructions

Chop the Sausages. In a high temperature pan, cook the Sausages until golden.

Finely chop the onion and mix all marinating sauce ingredients.

Cook at medium temperature for approximately 8 minutes. Lower the temperature, add pigeon peas, cook 10 more minutes and take off the fire.
